Your sauce will be thin at first, so you will want to allow your penne alla vodka to rest for 5-10 minutes to thicken. It will thicken as it cools. Bring a large pot of heavily salted water to a boil. Add 1 pound penne or rigatoni pasta and cook, stirring occasionally, until very al dente, 2 to 3 minutes shorter than the package directions. Meanwhile, finely chop 1 medium yellow onion and mince 5 garlic cloves. Reserve 2 cups of the pasta water, then drain the pasta and set aside. uLwuq.
